The AI F&B Takeaway
I recently attended the Tastewise Growth Summit 2025, a food industry marketing conference in Chicago last month. One topic that dominated every conversation was Artificial Intelligence.
It’s the phrase on everyone’s lips; equal parts excitement and unease.
For many, change feels like loss: loss of control, familiarity, or even creativity.
But my biggest takeaway is AI is here to help us create more food products than ever before and accelerate the way we bring great ideas to market.
At Food Forward Consulting, we see AI not as a threat to the food industry but as a transformative tool that helps turn ideas into products faster, smarter, and with greater precision.
From consumer trend prediction to formulation optimization, AI is making it possible to connect insight to action in record time.
It’s reshaping how innovators think, test, and scale by turning instinct into evidence and uncertainty into direction.
Imagine identifying flavor trends before they peak or testing ingredient combinations virtually before entering the lab….
AI enables product developers and entrepreneurs to validate, iterate, and commercialize with confidence, reducing waste, shortening development cycles, and sharpening understanding of what consumers truly want. Yet the technology itself is only half the story.
Innovation, at its core, is still about people: the intuition, storytelling, and purpose that make food matter.
One speaker at the conference captured it perfectly:
“AI gives us the map, but humans still drive the journey.”
The most forward-thinking brands aren’t handing over the wheel; they’re using AI to navigate more effectively, to make smarter, faster, and more meaningful choices.
That partnership between human and machine defines the next era of food innovation.
AI can analyze patterns, but humans create meaning. The future belongs to those who combine the two, using digital intelligence to illuminate opportunities and human creativity to bring them to life.
At Food Forward, that’s exactly what we do: blend technology, market insight, and experience to help brands design the next generation of food products that are smarter, more sustainable, and deeply attuned to what consumers crave next.
The future of food isn’t human or machine; it’s human plus machine.
And I believe that's a recipe for real innovation!
That’s it for this week.
